This is one of the most revered green teas in China, from the Long Jing village near Dragon Well. Bruce Richardson was a guest in those beautiful gardens in 2017 and 2018.
The flat green leaves—made by wok roasting—yield a clear, yellowish-green liquor with a slightly sweet aftertaste. It is prized for four unique qualities: jade color, vegetative aroma, mellow chestnut flavor, and singular shape. It contains the powerful antioxidant EGCG. Drink four cups per day for good health! Steep like a tea professional; never use boiling water on green tea. The optimal temperature is 165-175F.
